The great reception of this initiative has exceeded all initial expectations. For this reason, and due to the large number of applications received for the Mediterranean Cooking Workshop, and given the number of students who can finally attend, we are forced to close the registration period, initially scheduled for 17 May.

Cuisine and gastronomy are one of the most evocative ways of discovering and getting to know a culture. Food practices are a cultural phenomenon, a product of the gastronomic wisdom of a group in its environment. The most deeply rooted traditions are passed down from generation to generation and reflect the beliefs and values of the people and are one of the last cultural characteristics to be lost over time.
The Three Cultures FoundationIn response to a request that many of our visitors have suggested to us on one occasion or another, we would like to follow this path through the knowledge of the different gastronomies of the Mediterranean.
Thus, Throughout 2010, the Foundation's programme will be dedicated to the gastronomic approach of each of the countries that make up the Mediterranean basin or belong to its area of influence.
The first cycle, which will take place during the months of June and July 2010, will be dedicated to Morocco, a neighbouring country directly involved in the origins of the creation of the Fundación Tres Culturas.
These cooking workshops are conceived as a vehicle for transmitting knowledge of the culture and traditions of different countries to the interested public, while preparing different dishes and discovering alternative flavours.
The aim is to connect gastronomy with the habits, traditions and customs of the guest country. Thus, to give an example from the Maghreb environment, fasting in Ramadan is usually broken by eating a soup, the "Ramadan soup". hariraIt is somewhat lighter than the vast majority of dishes in this cuisine.
On the other hand, it should be remembered that cuisine has managed to occupy a preponderant place in our culture, both from a social perspective and from an artistic viewpoint. A good example of this is the presence, for the first time, of Ferrán Adrià, at the last edition of the documenta of Kassel - one of the exhibitions from contemporary art The world's most important international conference - held in 2007 - was the first of its kind in the world.
The cooking workshops, although organised by the Fundación Tres Culturas, will be held in the kitchens of the Hotel Abba Triana, as this establishment has the ideal characteristics and suitable facilities. The duration of each workshop will be four days, on a monthly basis, with a maximum number of ten students.
The second half of 2010 will be devoted to the following workshops: coinciding with the celebration of the Morocco in Three Cultures cycle, the first two workshops will be dedicated to Moroccan cuisine, resuming the activity in September, which will be dedicated to Italian cuisine.
In October the workshop will focus on Syrian cuisine, and in November the gastronomic tour will be dedicated to Israel.
Finally, in December, and commemorating the different festivities of this time of the year, the workshop activity will focus on the dishes and pastries especially linked to the celebration of Christmas, of the Hanukaof R'as As-Sana'a or the Hachura and the Mulud.
As for the content of these workshops, Tres Culturas proposes an itinerary based on:
- A brief history of gastronomy and its historical context
- Commodities: origin and influence on other cultures, e.g. Spanish culture
- Cooking techniques and utensils
- Relationship between traditions and food
In order to make the content of these courses known to all those who follow our activities, the Fundación Tres Culturas will publish a compilation of all the recipes prepared during the different cooking workshops.

The registration fee will be €30.00, and will be paid by the student once admission to the cookery workshop has been confirmed. Admission will be on a first-come, first-served basis.
